Smoked Soya Chunks Salad With Zhoug Dressing

This smoked soya chunks salad is a perfect example of  a balanced bowl. It is made with ingredients that that are very easy to find anywhere, from jungles to your nearest super market.

What is a balanced bowl? you may ask.

Well a balanced bowl or a mal typically means eating a meal tat has all the required nutrients for your gut to be healthy. A gut can be healthy when it gets proteins, carbohydrates, fibers, fats(the good ones), anti-oxidants, vitamins, etc. 

But what we are habitual to eating is a CARBOHYDRATE RICH diet, eg. bread(carbs) + rice(carbs) + chicken(protein) + excessive fats. We fail to understand that our gut needs much more than these carbs and unhealthy fats in order for it to be healthy and happy

Nutritional distribution

PROTEINS : Soya Chunks

These soya chunks are packed with proteins. This is a great option for vegetarians and vegans. Just boil them and toss with some spices and olive oil and then smoke it with a coal.

FIBERS : Lettuce

Put the lettuce leaves in ice cold water which helps in making them nice and crisp.

VITAMINS & MINERALS : French beans, Onions, Olives

These vegetables are packed with different vitamins and minerals. It is very important to eat at least 20 types of different vegetables in a week in order to get all the nutrition needed by the body.

CARBS : Potatoes

Like other components, carbs are equally important for the body, as they provide us with the energy that we need to perform various tasks ,like cooking.

Ingredients
  

for salad

  • 1 cup soya chunks
  • 3-4 leaves iceberg lettuce
  • ½ cup potatoes
  • ½ cup french beans
  • 20 gm olives
  • ½ cup onions
  • ½ cup cherry tomatoes

for Zhoug dressing

  • 3 tbsp olive oil
  • few sprigs coriander
  • 1 no. green chilies
  • 5 cloves garlic
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • ½ no. lemon

Instructions
 

for salad

  • 1 cup soya chunks Put the soya chunks into boiling water, then squeeze out all the water and put some oil in the pan along with some spices and sauté it. at last just smoke it with some charcoal.
  • 3-4 leaves iceberg lettuce Put lettuce into chilled ice water for some time. Then chop into dices.
  • ½ cup potatoes Cut the potatoes into 2/3 inch slices and boil it upto 60%. Then put them into a baking tray with some olive oil, garlic cloves, herbs and salt pepper, bake it for around 5 mins on 180℃.
  • ½ cup french beans boil them in salted water and then chop it up into small barrels.
  • Cut olives and onions into slices and just toss them into vinegar.
  • ½ cup cherry tomatoes cut them in quarters.
  • after all these steps are done, mix all the ingredients in a bowl.

for zhoug dressing

  • Take a mortar and pestle and add coriander, chilies, cumin powder, coriander powder, salt and pepper . Grind them coarsely, at last finish it with some olive oil and juice of ½ lemon
  • Finish of the salad by tossing the salad with the dressing.

Notes

Tips : To make your zhoug dressing more flavourful, you can make it a few hours prior to making your salad. But make sure to cover it with oil or else the herbs in the dressing will get oxidized.
