Basically, it is a one bite course which is meant to amaze your palate and salivate your taste buds so that they crave and get ready for the upcoming meal ahead. This course is the first morsel of food that enters your mouth when you are at a restaurant. It keeps the concept of the following courses entact and gives a glimpse to its guests about the meal that will be followed. It shows how a chef plays with his ingredients and shows how creative he is with his dishes by elevating super simple ingredient into complex forms by using multiple techniques.

What can you expect from an amuse bouche?

One suggestion do not expect anything from any pre conceived notions apart from the fact that it will be a one biter. These days Chefs have gone wild and done many crazy things with this one course. From some chefs literally servings raw vegetables of different kinds as amuse bouche, to some serving some poached or pickled food, to some serving very intricate and eye pleasing multi layered masterpieces. So apart from getting amazed do not expect anything else.

How did it come into existence?

And yes you guessed it wrong, if you thought it existed since the inception of fine dining. Rather, it was a rebellious movement led by a group of French chefs in the 1970s who sought to elevate the ideals of Nouvelle Cuisine. They aimed to shift away from the heavy and ostentatious banquet-style food of the time, embracing lighter, more delicate dishes that highlighted the true essence of the ingredients. 

Did it appear overnight: Ofcourse not. Only with small baby steps. With chefs trying to amaze diners by serving a premium olive or a slice of a good produce between the meal. But then it changed, because as we all know ‘human creativity knows no final frontier’, these small bites became a new ground for innovation between the trailblazing chefs of the time, And from there, future witnessed the evolution of the amuse-gueule into the amuse-bouche, a transformation reflected not only in its name but also in its very character and identity.

Why is it served?

Stimulate your appetite: the item served helps in salivating your palate which gives the guest an appetite for the futher courses to come.

Hospitality: then served something as soon as a diner enters shows generosity and gives a picture of the hospitality being demonstrated also creates a wow factor.

Experimentative: it gives a platform for the chefs to be experimental and showcase intricate skills through the medium.Highlighting ingredients: it is a great way to throw light on seasonal ingredients in front pf the guests.

The Records of Amuse Bouche

Rice vermicelli nest with cream cheese

Make a nest by frying soaked rice vermicelli in a circular mold, until golden. 

Make a mousse with edamame, cream cheese, fresh cream, chopped parsley and seasonings. 

Pipe 3 to 4 drops on the nest and garnish it with micro greens and flowers.

Crispy golden bar with water chestnuts

Make a hallow cylinder by wrapping a strip of spring roll sheet around a rod and fry until crispy and golden in colour.

Stir fry water chestnuts with black pepper and soy sauce, bind it with corn flour.

fill the cylinder with this mixture and garnish with spring onion curls.

Sesame cracker with sage and pumpkin

Make a shortcrust cracker by adding tahina in it.

Make a smooth pate out of roasted pumpkin, infuse the mixture with sage and fresh mozzarella cheese with some gelatin and set it in a hemisphere shaped mold .

Place the hemisphere on the cracker and garnish with some small leaves.

So, the next time a mystery morsel lands on your table before you’ve even unrolled your napkin, don’t drop to your knees and yell at the waiter about a kitchen mix-up. Take a deep breath. You aren’t being punk’d, and no, you won’t be billed for a rogue snack you didn’t order.
